Banana bread. My fave in baking and so quick and easy. I’ve been making this for a few years now and if you ever come to my house and witness some almost-black bananas on my counter, don’t think anything. I’m just getting those suckers ready for bread.
I love the smell of the my kitchen when this is cooking and there’s always this “home-y” feel, almost Betty Crocker-ish about it whenever I make it.
Here’s a quick recipe(thank you to my sweet neighbor Mrs. Cantrell, who made it for me a few years back):
3 very ripened bananas
1 1/2 C. of self-rising flour
1 1/4 C. of sugar
1 1/2 stick of butter, melted
2 large eggs
1 1/4 C. of chopped nuts (pecans or walnuts), optional
1. Preheat oven to 350 degrees.
2. Mash ripened bananas with a fork in a large bowl, until they are mushy.
3. Add flour, sugar, butter, eggs and nuts in the bowl with the bananas.
4. Pour into a bread pan and bake for 50-60 mins.
It really is so delicious, especially when just coming out of the oven. Go ahead, try it. And grab a cold glass of milk and scarf it down.
